To achieve a sweet fried plantain the secret is to let it turn black. Plantains have three primary stages of ripeness: Green – Patacones or Tostones, depending on where you are from, are made by frying the green unripened plantain. The green unripened plantains have a starchy potato type taste and texture. The black overripe plantain gives it a sweet mushy texture allowing it to turn more caramelized when frying.
Fried Plantains Are Great Toppings
This delicious fruit makes a great topping. Try topping your bowl of vanilla ice cream with a few pieces of some warm, bright-colored, sweet, fried plantain. A great way to add flavor.
