Chicken Soup - Cut The Crap Kitchen - Costa Rica

Chicken Soup – Electric Pressure Cooker

Hearty Chicken Soup is more than just a remedy for when you're under the weather—it’s a versatile meal that works perfectly for lunch, dinner, or even a quick, protein-packed snack.
By using an electric pressure cooker (Instant Pot), you can easily prepare a large batch for the whole family or for a week of meal prep. Once cooked, it’s simple to reheat a bowl for a fast, "cut the crap" meal. Loaded with fresh vegetables and chicken, this dish provides the essential vitamins and minerals your body needs to thrive. The variety of flavors and textures makes it incredibly satiating, giving you the clean energy to power through even the most hectic afternoon schedule.
Pro Tip: You can easily customize this recipe to your taste by choosing different soup bases. We love using Maggi’s “Sopa Criolla Gallina Con Fideos” for that authentic Costa Rican flavor (note: our nutritional info is based on this specific flavor).

  • 10 Small Potatoes
  • 1 Package Maggi Soup Mix (Sopa Criolla Gallina Con Fideos)
  • 2 cup Green Beans (approximately 2/3 bag fresh)
  • 1 Carrot
  • 4 Cloves of Garlic
  • 1 Large Chive (1/4 Cup chopped)
  • 1/2 tbsp Sprigs of Cilantro
  • 10 cup Water
  • 1 Onion

Instructions

Preparation

  • Mince the garlic.
  • Chop the onions, green beans, carrot, and chives.
  • Cut the potatoes into quarters.
  • Chop the chicken into bite-size pieces.

Cook

  • Add all the ingredients to the pressure cooker. (don't forget the dry ingredient packages)
  • Add the water and set to cook on "Soup" setting. Note: When you add the water, it should reach approximately 4L. Check the capacity of your pressure cooker. You should allow enough room for the pressure. If necessary, reduce the water to accommodate the pressure cooker specifications.
  • Once the soup is finished cooking, allow it to sit in the pot for an additional 2-3 minutes before releasing the pressure.
  • Fill the bowls with a ladle and enjoy.
