These tostadas are a favorite in our house, made with common ingredients found throughout Costa Rica and Latin America. Crispy Refried Bean Tostadas make for a quick and easy lunch that provides a great boost of nutrients and even better flavor.In addition to being simple to prepare, these tostadas are incredibly affordable. While they aren't a traditional Costa Rican dish, they are made using locally produced ingredients, which keeps the cost low and the quality high. Slice the cabbage and set it aside. We use a banjo/mandolin slicer to create quick, easy, thin slices.
Cook
Toast the tortillas in a toaster oven. If you do not have a toaster oven, you can fry the tortillas in a pan or bake them in the oven.
Warm the refried beans and rice on the stove or in the microwave.
Assemble
Place the tortilla on a plate and cover it with 1/2 of the refried beans and rice.
Cover the beans with 1/2 of the onions, tomatoes, and cabbage.
Top the tostada with hot sauce, Lizano Salsa, and sour cream, if desired.
