Best Holiday Side Dish Camote Sweet Potatoes with Marshmallows

One of the standout recipes from my Thanksgiving celebration in Costa Rica is Camote Sweet Potatoes with Marshmallows. Enjoy the best holiday side dish: Sweet Potatoes with Marshmallows! This delightful dish is perfect for your festive gatherings. It combines the rich, earthy flavors of camote (a type of sweet potato) with the sweetness of marshmallows, creating a comforting and festive side dish that everyone will love.

Ingredients:

  • 4 large camote sweet potatoes (or regular sweet potatoes if camote is unavailable)
  • 1/2 cup of unsalted butter, melted
  • 1/2 cup of brown sugar
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 2 cups of mini marshmallows

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Sweet Potatoes:
    • Wash and peel the camote sweet potatoes.
    • Cut them into evenly sized cubes or slices, about 1-inch thick.
  3. Boil the Sweet Potatoes:
    • Place the sweet potatoes in a large pot and cover with water.
    • Bring to a boil and cook for about 10-15 minutes, or until they are tender but not mushy.
    • Drain the sweet potatoes and set them aside.
  4. Make the Sweet Glaze:
    • In a large mixing bowl, combine the melted butter, brown sugar, cinnamon, nutmeg, vanilla extract, and salt.
    • Stir until all the ingredients are well mixed.
  5. Coat the Sweet Potatoes:
    • Add the cooked sweet potatoes to the bowl with the sweet glaze.
    • Gently toss to coat the sweet potatoes evenly.
  6. Bake the Sweet Potatoes:
    • Transfer the coated sweet potatoes to a baking dish.
    • Spread them out evenly in the dish.
  7. Add the Marshmallows:
    • Sprinkle the mini marshmallows evenly over the top of the sweet potatoes.
  8. Bake Until Golden:
    • Place the baking dish in the preheated oven.
    • Bake for about 15-20 minutes, or until the marshmallows are golden brown and the sweet potatoes are heated through.
  9. Serve:
    • Remove the dish from the oven and let it cool for a few minutes before serving.
    • Enjoy this delightful and sweet side dish as part of your Thanksgiving feast!
