Dragon fruit, also known as pitaya or pitahaya, is the fruit of several different cactus species indigenous to the Americas. In Costa Rica, dragon fruit thrives in the dry, stony areas of the Guanacaste and northern Puntarenas provinces. Because these are the most arid parts of the country, you will commonly find dragon fruit at ferias and fruit stands from June to November when they are in peak season.
How to Spot a Ripe Pitaya- The spiny outside of a ripe fruit will be either vibrant pink or yellow. If the skin is still green, it isn't yet ripe or ready to be picked. Once you cut through the skin, you’ll find a gelatinous pulp that is either a stunning deep purple or a bright white with speckles of black seeds.
