If you are looking for a light meal that really hits the spot, you have to try this Simple Pan-Fried Spaghetti. It’s the perfect solution for a quick, easy dinner or lunch when you want to "cut the crap" and keep things uncomplicated.
This dish is a fantastic alternative to standard boiled noodles with heavy, processed sauces. Frying the spaghetti gives the noodles a unique, satisfying texture, while fresh tomatoes and onions provide a bright, savory finish. It’s affordable, fast, and a great way to use what you already have in your kitchen to create a real-food masterpiece.

  • Water
  • 1 1/2 tbsp Coconut Oil
  • 3 Cloves Garlic
  • 1 tbsp Fresh Oregano
  • 1 Tomato
  • 3.9 oz Spaghetti Noodles (see noodle package for serving size)
  • 1 1/2 Onion
  • 1/2 tsp Salt
  • 1/2 tsp pepper

Preparation

  • Begin by filling a pot with water. Add 1/2 Tbsp coconut oil and bring to a boil.
  • While the water warms, mince the garlic and the oregano.
  • Chop the tomato and the onion.

Cook

  • Once the water comes to a boil, add the noodles and allow to boil for seven to ten minutes, or until desired softness. You may want to stir every couple minutes to help keep the noodles from sticking together. (Check the noodle packaging for more specific information.)
  • With approximately 3 minutes remaining on the noodles, coat the bottom of a pan with 1 Tbsp coconut oil. Heat the pan on medium-high heat (approximately setting 6.5).
  • Sauté 1/2 of the garlic and 1/3 of the onions, until onions are caramelized and become translucent (approximately two minutes).
  • When finished boiling, drain the water from the noodles.
  • Once the onions are caramelized, add 1/2 the tomato, oregano, salt, and pepper to the pan and begin frying.
  • After 30 seconds, stir the tomatoes, and then add the spaghetti noodles to the pan. Fry for 1 minute, stirring often to reduce sticking.
  • Add 1/2 of the remaining onions to the pan. Continue to fry for the remaining 1-2 minutes, depending on desired crispiness of the noodles.
  • Remove from heat and place the noodles on plates. Top the noodles with the remaining onions and tomatoes.
