Camote Sweet Potatoes Casserole With Marshmallows: Costa Rican Style

Bestselling Cookbook authors Steve & Nikki go head to head to see who can make the best Thanksgiving side dish. Both Costa Rican Camote dishes were served in Costa Rica at the annual Tamarindo Church Thanksgiving dinner? The vote is in. Learn how they made the dishes and who the winner is.

Comote is available year-round in Costa Rica so this isn't just a holiday favorite in our house. We have baked comote several times a year. If you looking for a unique side that will put a smile on the faces of your family, be sure to add this recipe to your repertoire. It can satisfy those sweet cravings while being quite satiating. As a bonus, it can also help remind you to be thankful each time you eat it.

Note: White marshmallows can be difficult to locate in parts of Costa Rica. Most regions carry the multi-color style which also seems to have a slightly different flavor. We prefer the white, but the multi-color does just fine.
