Have you ever tried Yuca Fries? In Costa Rica, making traditional French fries can be a challenge because local potatoes are often quite small. Yuca is a fantastic, affordable alternative found throughout Central America, making it a staple in our "cut the crap" kitchen.
These Crispy Chili Yuca Fries bring a savory kick to the standard fry. Because they are baked instead of deep-fried, they use a fraction of the oil while remaining incredibly satisfying. They have a unique texture and flavor that we actually prefer over potatoes! Whether you're looking for a snack for the big game or a side for your next BBQ, these spicy yuca fries are a guaranteed crowd-pleaser.

  • 2 Yuca
  • 1 tbsp Coconut Oil
  • 2 tsp Chili Powder (if desired you can substitute cumin)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

Preparation

  • Preheat oven to 400º Fahrenheit.
  • Peel the yuca to remove the waxy skin.
  • Chop the yucas in half and then slice into fry-shaped pieces of desired thickness. Note: Depending on your preferred fry thickness, you may need to adjust the cooking time.
  • In a large bowl combine the chili powder, salt, and pepper.
  • Add the coconut oil and yuca to the bowl and lightly toss until all pieces are coated.
  • Line the yuca pieces on a baking sheet allowing space between each piece.

Cook

  • Place the baking sheet in the oven and bake seasoned yuca fries for 15 minutes.
  • Remove yuca fries from the oven and flip with tongs or a fork.
  • Place the yuca fries back in the oven for approximately 15-27 additional minutes. Tip: After 7 minutes check the fries every few minutes to ensure the desired crispiness.
  • Plate and serve with your favorite dipping sauce.

Notes

Pro Tip for Extra Crunch: We love our fries very crispy, so we leave them in the oven a bit longer. If you prefer a softer interior, try these two steps:
  1. Boil the cut yuca pieces in water for 10 minutes prior to seasoning.
  2. Adjust your bake time to 15 minutes on each side.
