Chicken & Camote – Electric Pressure Cooker

Chicken & Camote – Electric Pressure Cooker is another quick and easy recipe that produces a very nutritious meal. Not only is Chicken & Camote packed with nutrients, but is extremely affordable too! Camote is sweet, so it compliments the savory flavors of the chicken perfectly.We recommend adding a bright colored slaw, or fruit salad to increase the visual presentation of the dish.

 

Ingredients

  • 1 Chicken Fillet 7oz.
  • 2 Camote
  • 1 Small Onion
  • 1/2 tsp Cilantro
  • 2 Cloves of Garlic
  • 1/2 tsp Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Preparation

  1. Place the whole piece in the electric pressure cooker.
  2. Mince garlic, cloves, and top the chicken.
  3. Chop the onion and top the chicken.
  4. Sprinkle the dry seasoning evenly over the chicken.
  5. Peel the camote. If it’s a large piece, cut it in half. Once peeled, place the pieces immediately into ice water until you are ready to start cooking.

    Note: Camote will turn brown/black rapidly once it is peeled. If you don’t like the look, place camote in the refrigerator until cold. Once peeled pieces immediately into ice water until you are ready to start cooking.

Cook

  1. Place the lid on the pot and cook on the “Poultry” setting.
  2. When finished cooking, release the pressure, remove the lid, and take out the chicken.
  3. Cut the chicken in half and place on the plates. Then plate the remaining vegetables.
