Patacones

Patacones are a quintessential Latin American food. In Costa Rica, you'll find them on almost every casado and served as a popular appetizer at local restaurants. These fried plantains are a delicious, versatile snack that can be used as a base for many other meal options.
You can enjoy them on their own like chips, or top them with savory meats like shredded beef, pork, or chicken. The possibilities are endless!
Green vs. Yellow Plantains:While you can use either, the stage of ripeness changes the result. Green plantains create a more "potato-like" chip that is starchy and savory. Yellow plantains are slightly sweeter and softer. We recommend the green version for traditional patacones because they hold together better, making them the perfect sturdy base for your favorite toppings.

  • 2 cup Coconut Oil
  • 2 Plantains (green or yellow)

Preparation

  • Heat coconut oil in the pan on medium-high heat, (approximately 6.5 setting).
  • Cut the plantains into one - inch pieces.

Cook

  • Once the oil is hot, place the plantain pieces in the pan for two minutes.
  • Flip the plantain pieces, and cook for an additional two minutes, until yellow in color.
  • Remove from pan and smash the pieces with the bottom of a glass, or bowl to form chip shapes. Tip: Use glasses or bowls without a lip on the bottom. The flatter and smoother the bottom is the better. If the plantains are sticking to the bottom of the glass or bowl, try coating the bottom with coconut oil, and use a knife to slide them off.
  • Place the plantain chips back in the oil to cook for an additional three minutes.
  • Flip the chips and cook two-three more minutes, until golden brown.
  • Remove the patacones from the oil, and place on a paper towel covered plate to cool. Once cool, plate your patacones and enjoy.
  • Once the oil has cooled, store the oil (approximately one cup) for the next time you fry food. (Nutrition information is based on 1 cup of Coconut oil).
