Red & Black Beans

This Healthy Instant Pot Red and Black Beans recipe is a beautiful and nutritious staple for any kitchen. By combining red and black beans, you get a vibrant color palette that makes dishes like tostadas or traditional rice and beans look as good as they taste.

Using an electric pressure cooker (Instant Pot) significantly reduces cook time and saves energy while ensuring the perfect bean firmness every time. This is an extremely affordable recipe that is perfect for batch cooking. Making a large amount at once is a great way to “cut the crap”—it ensures you always have a healthy, protein-packed base ready for another meal or two later in the week!

Ingredients

  • 1/2 cup Red Beans
  • 1/2 cup Black Beans
  • 2 Cloves Garlic
  • 1 tbsp Chili Powder (You can also substitute Cumin)
  • 1/2 tbsp Fresh Cilantro minced (7-10 sprigs)
  • 2 Bay Leaves
  • 1/2 tsp Pepper
  • 4 cup Water

Preparation

  1. Measure out the beans and rinse of debris, then add to the pot.
  2. Mince the garlic and cilantro, then add to the pot.
  3. Add the water and all the remaining spices to the pot.

Cook

  1. Secure the lid and set to the “Beans” setting.
  2. When the timer goes off release the pressure. If you want softer beans, allow the beans to set under presser for an additional 5-8 minutes.
  3. Once the pressure is released, drain any excess water.
  4. Serve and enjoy.
